  • Stuffed Zuc question

    Well Cowgirl, the zuc bandit caught up with me and I found 2 beauties in my passenger seat this AM

    Soo..I got one halved and hollowed, and koshered to draw out excess water.

    Made a stuffing of chopped local reto breadstix, diced tomato (Found along with wayward zucs...) onion, garlic and thyme/basil/cbp/oregano.

    Sweated onion and garlic in olive oil, added white wine, simmered a min and added everything else.

    Plan on stuffing and baking with a parm topping.

    Now for the question... I am afraid the stuffing is gonna just slide out when cutting slices. ANY way to make it stay at least SEMI attached? Perhaps a flour coating on the zuc interior before baking?

    How bout a rocket-hot "searing" on the split side, drying the surface to be stuffed out a bit?

      Hey Rich, how about putting a small layer of fresh grated Parm (none of dat chit in da green can) on the zuke before stuffing and tossing a little in with the ingredients?

      We do that when we make nachos at home. We put chips on a plate, cover lightly with cheese, add toppings, then more cheese. Everything sticks together that way. before we started putting cheese down first, all the ings would stick together, but not to the chips.

        If I had the dry base... that would work. Heck...maybe the "sear" THEN that approach. I DO have a propane torch :{) And might even consider mixing in an egg in the stuffing....

            Eh tasty but ugly. I think the solution may be zucc CUPS. Sliced in like 3" high cylinders and hollowed out. Then everyone would expect the filling to goop all over. Sigh. Good flavor tho.
