Pretty much sold on the opinion that bacon goes good with everything.
Dropped a frozen boneless ribeye into a 134* bath on my way to the gym. Prior to freezing I had seasoned it with worchy and Montreal style steak seasoning.
While it was resting I decided frying up a few slices of my Brown Sugar bacon would make a great side. And since I'd need a bit of grease to sear the ribeye, two for one. Added a small salad to make it healthy and boom, dinner was served.
The bacon was pretty awesome, not salty which had been a small concern, nice smoke flavor that went well with the sweetness from the brown sugar. Plotting a trip to Costco in the near future for another belly as I can see 8#s won't last long.
