  • Bacon Wrapped Chicken Tenders

Wanted a quick early dinner/late lunch, so I decided to grill up some bacon wrapped chicken tenders

Chicken tenders cleaned & ready for a 4 hour bath in MH Nekkid Brine with some garlic, onion, & CBP
    <script async="" src="https://widgets.flickr.com/embedr/embedr-4110feef4aefd18270192d8aeba3ff41.js"></script><script async="" src="https://embedr.flickr.com/assets/embedr-loader.js"></script><script async="" src="//embedr.flickr.com/assets/client-code.js" charset="utf-8"></script>

I didn't figure anyone really wanted to see a bag of tenders soaking in brine, so I skipped taking that pic

    Tenders rolled in MHGP
    <script async="" src="//embedr.flickr.com/assets/client-code.js" charset="utf-8"></script>

Tenders wrapped in bacon and dusted with a mix of CBP, granulated garlic, & granulated onion
    <script async="" src="//embedr.flickr.com/assets/client-code.js" charset="utf-8"></script>

While getting the tenders ready, I had a small pot of purple hull peas cooking seasoned with bacon, onion, garlic, CBP, & stewed tomatoes
    <script async="" src="//embedr.flickr.com/assets/client-code.js" charset="utf-8"></script>

Keg heated to 400° using RO lump and pecan wood
    <script async="" src="//embedr.flickr.com/assets/client-code.js" charset="utf-8"></script>

    Tenders going on the grill
    <script async="" src="//embedr.flickr.com/assets/client-code.js" charset="utf-8"></script>

    Almost done
    <script async="" src="//embedr.flickr.com/assets/client-code.js" charset="utf-8"></script>

Tenders served with purple hull peas and some BBQ sauce for dippin'
    <script async="" src="//embedr.flickr.com/assets/client-code.js" charset="utf-8"></script>

    Thanks for lookin'
    Jim

I like this BYBBQ - how does the chicken consistancy turn out under the bacon? Guessing pretty moist with the Nekkid brine and bacon cover. Been looking for some different twists on chicken

They're very moist. Yes the brine makes a big difference. Thin sliced bacon and a higher grilling heat makes for a shorter cook time which combined with the brine it leaves the chicken moist and the bacon crisp.

Looks great! We do basically the exact same thing with the chicken tenders. Probably my younger son's favorite bbq meal. Never had the peas but they sound very good!

Purple Hull peas are a type of cow pea. Similar to black-eyed peas, but they are much more flavorful and have creamier texture.

Thanks folks for all the comments and

If you can find the purple hull peas(stores usually have them frozen) try them. They are very good.

Lately, Pam and I have been cooking more basic cooks with our grilling and smoking. We feel that we don't need all the fancy machines to smoke and grill good food. I won't say anymore, JMHO

Awesome cook. I'll have to try the bacon wrapped tenders. I grew up on Purple Hulls so I know them well. I remember helping shell them as a kid. There's even a band called the Purple Hulls from the town I was born in: https://youtu.be/uXoUB-uTcbI
