    My wife loves Paella and I've never had it so I need to give this a shot in my wok this summer.

    Sofrito is just the mix of peppers and onions that you start with

    Bomba rice is a special variety from Spain that absorbs large amount of water without getting all mushy on you

    costra is when the water evaporates and the rice in the pan begins to for a crust...the crust is the costra.

    pimenton is a sweet smoked Spanish paprika...a key ingredient in paella along with the saffron of course. Saffron....(this is your lucky day) is the most expensive spice on the planet that I know of...but a little goes a long way.
