  • Paella

    Had a few friends over last night and made up a batch of paella on the grill.




    Started out by browning up the chicken in some olive oil...browned it real good and then removed to a plate.



    Then saute'd the sofrito and the chorizo



    Added my Bomba rice and cooked for a minute, then added the chicken stock, grated tomato, pimenton and saffron and nestled the chicken back into the pan.



    Cooked it until the moisture just about disappeared and then added my clams, mussels, shrimp, peas and red pepper strips. Then just cook until they are done and the costra starts to form.



    It was darned tasty....the only issue I had was with that damned bartender at Casa Hoser..the sumbich over served me again!

      I think I might be able to handle some of that.
      Looks freakin' fabulous !
      Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
      My best asset however is the inspiration from the members on this forum.

          Holly Crap! Man that looks incredible. Don't know what bomba rice is...that looked like a work of art in that wok. if the man will let me.

            Bomba is a specific variety of Calasparra rice that is know for having very short grains, and the ability to absorb massive quantities of moisture and not become sticky. This makes it perfect for paella.

                Holy Moly, Hoser! That is one tasty looking dish!! I don't know where the hell Keith is going to find fresh mussels and clams here in Western Colorado... but as soon as he does, we are going to do this!

                      WOW!....
                      Your patio is quite lovely! your paella.. I swear I could smell it! absolutley one of my favorite dishes, and Im scared to even attempt trying to make it. Have dear friends from Cuba, ended up in Spain back in the day.. and Mercy makes paella, its like you have died and gone to heaven! Your dish is picture perfect! Points poe-poe has got me too so i owe you on the re-load... thanks for the smell-o-vision!

                        Fanfreakingtastic!!!!! that is one of the finest paella I have seen been a chef for many years and that my friend is a beautiful thing awesome job!
