Thanks for the warm welcome. So for inquiring minds a little background info.
I'm located in Sherbrooke, Quebec, Canada. Right now I'm not only a newbie to the forum but also a newbie to smoking. So far I don't have much equipment (Centro 2000 BBQ, KitchenAid mixer with grinder attachment, a new set of heavy duty knives and a great friendship with the local "real" butcher) but have lots of interest so decided to go where the masters are
At this time I smoke using my Crappy Tire BBQ (my fellow Canuks will understand what I mean) with a small tray that I fill with my smoking wood chips. I also enjoy curing meats to make Coppa (like Proscuitto). I'm very new to the art so I will be doing more listening than talking but in just reading a few posts I now have all my weekends for the remainder of the year booked to try out some of what I've learned.
