  • Hello From Minnesota

    Have attempted smoking in the previous years but have upgraded my smoker this summer and have been successful with Ribs, Chickens, fish, and more ribs...wife never ate them and now wants them all the time.

    I can't wait to try my hand at summer sausage as I have 15lbs ready to go into the smoker tomorrow! Especially with deer season fast approaching be a great winter.

          Forgot to add one question

          If I am unable to get my smoker below 180-190, for doing summer sausage and snack sticks, can I do them the whole time at that temp or will it not work? Thanks in advance for any advice.

                I have seen some instructions that only have one temp, be it 165* or 200* or anywhere in between, and they tell you to smoke till you hit an internal of fill in the blank_______ (152* to 162*)..... There are a lot of different methods.....

                Not sure what type of equipment you are using, but you may consider proping a lid open, or some other thing that would help you get your temps down..... Or even smoke first & finish in an oven, where you have better temp control....

                Just some thoughts...... Good luck!

                      Welcome aboard Big Wade... A little info on what type of smoker you have will help us determine on what you should do to keep the temps down..

                            Welcome aboard, Big Wade. Nice to see another Minnesotan. Where abouts are ya? A pic or at least some info on your smoker would be a big help. Someone on here has either seen one, used one or has one. Hehe. Folks will jump in and help ya out.
