    Hello All,

    Great site here and couldn't help but sign up after reading it for a month or so. I currently have a 22.5 weber kettle, weber smokey joe, original brinkman offset smoker (converted to propane), and a big chief smoker. My latest hobby is SAUSAGE, which brought me to this site. The goal is summer sausage and to do this I will need another smoker since my other "tools" are either too hot or cold. Thinking about a wood cabinet smoker utilyzing my existing propane setup for heat.

    I have hunted and fished my whole life in Washington state and catch almost too much salmon the past couple years. Lightly smoked and canned is my prefered method for preservation these days.

                            GO HAWKS. Everybody in the whole state especially around here, is a fan now, but I was a fan way before that.

                            I inherited my Dad's cast iron sausage press recently, and have a heavy duty manual meat grinder that get's the job done so no upgrades required here.

                            Fish canning is simple, but boring. You sit there and watch the dial for a whole hour, but the results are worth it. Half pints packed tight. 60 minutes at 15 pounds of pressure, and I am still kickin. We have really good albacore fishing off the coast over here, and I can tell you home canned tuna is incredible. Last week I saw a half pint of Alaska smoked and canned sockeye at the store for $14.99 and my eyes about popped out.


                            Got quite the geography going on here.
