I had a rather large watermelon sitting around that was past it's prime and getting a little mushy so I decided to break out the ice cream maker that I haven't used in probably 10 years and made watermelon sorbet.
First cut up the melon and pressed it through a fine mesh strainer, yielded about a quart of purée. Had it been a seedless melon I would have just thrown it in the blender.
Next I made a simple syrup with 1.25c water, 3/4 c sugar and 1/2c Splenda for baking. Came out pretty sweet, next time I'll cut the sweetners in half I think.
Then the juice of two limes. Mixed up and sat in the fridge for an hour to cool. Then processed in the ice cream maker for 25 minutes.
The stuff is awesome. Nice and refreshing on a hot day. I think next time a splash of tequila might find its way in the mix too.
