  • Mini Yardbirds w/ pellet pooper

    A couple of mini yardbirds or in Mark R words "chiggin" No brine ( I didn't think that far ahead) only a mixture of half/half MHGP & Hot Whang liberally rubbed. Spatchcocked (no Rich I didn't do the Cockspatch method here ) Threw on the pellet pooper at 300 for about 1.5 hours if I remember - raised the temp to 375 the last 20 min or so to crisp up. Pulled them when IT temp hit 170.

    Mashed taters & corn and a hunk of bread on the side - Good eats!

      Looks great, Unc. How did the skin come out? I still struggle with rubber chicken skin.

          It came out pretty good Otis - that last bit of high heat usually crisp's it up.

              My kind of meal. Great looking plate Sir.

              Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
              My best asset however is the inspiration from the members on this forum.
