        I didnt know there was another option. & maybe assumed folks know about me and Weber being tight. :-)

        I had to run an extension cord for power - my outside outlets were burnt out, too cold out figure out why right now.
        Just because you welded some shit together doesnt make it a WSM.

                I think I was at restaurant depot looking for lard and was told they do not carry it.....

                          Hey boss, the lard I am using now is from Smoking a Goose in Indy, some talented cats. Locally you can get some at Publican Quality Meats in Chicago.

                          Really can tell the difference between these and the Armor brand in the tubs in the store. Much more creamy and flavorful.

                          Pretty much any chicken did hi do on the grill or smoker gets rubbed in lard, really helps the skin.

                            Feel free to make your own... save that bacon dripping...smoky flavored. Try bacon in the oven for "cleaner" lard. Or roast some belly up for unsmoked.

                                When I do chicken prep, I save the fatty stuff and simmer it in a pot with a shallot. After it renders down, strain it into a container, cover it, and put in the fridge. It turns into a real nice lard called Schmaltz.
