    Wow. That's a lot of meat goodness. How do you like the sand diffuser? Had another idea in the works.

          WOW, everything looks fantastic!!!! What temp were you cooking at and did you think the sand help with temp control?

            I don't know if it did anything or not. I have always used sand or some liquid in a pan and just carried it over to the way I cook on the Akorn. The temp stayed steady once I set it where I want. But at least the pan catches the oils dripping from the meat and less mess in the cooker.

                    It's also a heat "capacitor"..holding thermal energy in case of opening/mopping/etc. to help temp recovery. AND... it's a heat deflector, causing more of a convection/indirect heat flow within the cooker.

                    Without one..you are just grilling WAAY above the coals is my call.
