Hoppin' John
There are many variations of this recipe. This is the one I tweaked to my tastes and use.
Ingredients
2 Tablespoons Butter
1 whole Large Sweet Onion, Diced
1 whole Red Bell Pepper, Roasted then Diced
1 whole Jalapeno seeded and diced
4 cups Soaked Purple Hull or Black-eyed Peas
5 cups Chicken Broth
1/2 pound Smoked Thick Cut Bacon cut into 1/2" pieces
Salt and Fresh Cracked Black Pepper, to taste
2 Tablespoons White Vinegar
Hot Sauce to Taste opt
Long Grain White Rice, For Serving
Preparation
Soak peas in cool water for at least 6 hours. Rinse before using.
In a large pot over medium-high heat. Cook bacon, then remove bacon and set aside. Add butter, onion, jalapeno, red pepper to bacon grease and cook til softened.
Stir in soaked beans, then add chicken broth, bacon, salt & pepper to taste. Bring to a boil, then reduce heat and cover the pot for 30 minutes.
After 30 minutes, check the liquid level; if it has too much liquid, cook with the lid off til reduced . If it's too thick, add more broth.
Cook til peas are tender
Then taste for seasonings. Add more salt and pepper if needed.
Serve over long grain white rice
I like to add Choula Hot Sauce to mine when served
