  • These Nuts

    Are fantastic, cold smoked for a few hours. Then tossed in a mixture of 2 egg whites, 1/4 cup of honey and 2 tbsp of water. Mix all dry ingredients and add to the nuts in a large ziploc and shake excessively. Then smoked at 300 for about 30 minutes.

          Looks like you used more then egg whites honey and water, care to share the recipe? They look great

            All the ingredients were in the picture.

            This is for each pound of nuts
            1 egg white
            2 tbsp water
            1/4 cup honey.
            1/3 cup brown sugar
            2/3 cups white sugar
            1.5 tsp kosher salt
            1.5 tsp cayenne (could also sub hot smoked paprika )
            2 tsp death pepper (optional for heat, what I had on hand)

            Cold smoke first, then mix wet ingredients and toss nuts in. Mix dry ingredients and put in gallon ziploc. Add moist nuts and shake excessively. Back on smoker at 300 for around 30 minutes. Let cool and separate

              Are they sticky or dried when done? I like the looks of that for sure! 2 tsp Death Dust or something else? I can't imagine with 2 tsp of Death Dust made by umm... BarkonButts or someone else? That stuff is HOT!!!

                  They were sticky coming out of the heat but are dry to the touch after cooling. Yes I cold smoked for probably 3.5 hours, then mixed with wet then dry ingredients before going back on at 300 to carmelize.
