  • Alabama white sauce

    I'm doing a tapas menu for my girlfriend and a few of her friends tonight cos I'm out for the last evening of the buck season here in Denmark

    Trying out the basic idea of what goes into the sauce, but with cream cheese instead of mayonnaise.

    It will go along with cold sliced bbq chicken

        Here is what I use to make it

        1 lb 9 oz Mayonnaise
        4.75 oz White Vinegar
        1.5 oz Sugar
        1 oz Salt
        .125 or 1/8 oz gr ound Pepper
        1/8 oz G arlic powder

          It turned out great, the cheese gave it a bit more "body" and less greasy. Well worth it!

                    I like to make my Big Bob's knock off white sauce with mayo. Horseradish sounds like a good addition, the recipe I use has paprika and lemon juice.

                    EDIT (Oops... I went and looked and the Paula Dean FoodNetwork recipe with horseradish and cayenne pepper is the one I use except for a thicker sauce I cut out the water)

                    Instead of serving it on the side I dip the cooked chicken pieces in the sauce and put them back on the grill. The sauce with real egg mayonnaise will brown up like a Bearnaise sauce.
