I have been smoking for 14 years. I do catering and work out of a restaurant and bar in northwest burbs. I am looking to rent 2 1000 lb smokers for Sturgis any ideas would be helpful, I only have a 500 lb smoker.

I'd start by checking on regulations that are in place...I don't know, but I can imagine that say...Oh, for instance... a road side BBQ truck and smoker would be shut down really quickly. Probably some BS would be given about:

      1. Permits
      2. Health Codes
      3. Tax Collection
      4. Fire is not allowed
      5. Public Safety
      6. Impeding Traffic
      7. Public Officials are douch bags
      8. Territorial dispute with other Food Vendors
      9. Yada
      10. Yada
      11. Yada

But other than that it is a really good idea! Good luck.

You have been there and have a plan, confirmed location, knowledge of the competition, etc, and have it all covered except for the smokers?
