      Thanks for the info Chef.

      Looking into this joint and the US food location close to me is not a Chef Store...those are only in 5 locations: Charlotte, Columbia, OK City, Tempe, and Dallas. https://www.usfoods.com/why-us-foods/chef-store.html

      Too bad, because it is only 12 miles from my house (I live 12 highway miles out of town), so it is closer than anything for me.

        i wish they had more locations...as a supplier i am not a fan of U.S.Foods but as a retailer they are the best "where house" style i have found.............

              Yes much better Rob, the cured slab was two firm or chewy, and also two salty. It didn't offer that almost melt in your mouth texture the belly did. I used a butt to try your suggestions and it was pretty dam good, nice and tender and meatier then the belly, but way better then the bacon.
