  • Cornish Hens on the Weber/vortex

    Found a source for heritage Cornish hens and gave them a shot. If you ever see these get them! Worth the splurge, it was $20 for the three of them. No brine, just a light dusting of rub. Absolutely didn't need a brine, they were the best flavor/texture/tenderness I've ever had. Spatchcocked indirect with temps running 400 with a chunk of cherry. Did some red beet eggs earlier and held some beets and made Harvard beets, these came out great! Will do these again. Baked potato and roasted maple Dijon carrots. Mighty fine meal. I'm telling you these birds were awesome!

            You do know it’s really just a small chicken, right? Actually, I think most of the chicken you see is of the Cornish variation. Just full sized.

                Outstanding cook Shell, wow.


                Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                My best asset however is the inspiration from the members on this forum.

                          Could easily get 2-3 more on there, I just didn't have enough people to eat them! They were so good though I should have gotten more just for leftovers.

                          I know they're just little chickens, but they're so young and tender and such great flavor. Doesn't take much to season them. And by the way, even though they're called hens, you could get a male or female.

                          I'm with Phil on this with chickens on the grill, I always use the vortex. And setting it up this way I could put the thinner part of the birds away from the heat. Also didn't have the vortex screaming, just a nice steady 400. Skin was still nice and crispy.
