  • a new belly hitting the smoke

    Have had a belly in dry cure for about 10 days so today was the day to get her smoked. It was nearly 0* F here this morning so I hung it in the MES and set the temp at 40* so it didn't freeze. Has about 4 more hours of smoke to go. Thanks to Brian. Using the apple wood pellets he sent in the Christmas exchange for the thin blue!

    Looking goooooooodd,,, I just dry brined my belly yesterday,, going to let er sit for 10days or so,,,

              It turned out great of course! I was letting it rest a couple of days in the meat fridge. I'm judging a field trial in Colo springs over the weekend so it's vac packed whole now and will slice and get pics for you guys in 2018.

                        All I got to say is WOW .... I need to get after this. How long was your smoke time and whet temp did you take it to? What was your cure? Thanks in advance

                          you DO need to get after this. I was hooked after doing my first belly a few years ago. The cure is really simple. I really wanted to watch the sodium this time so I went with pink salt, salt, brown sugar, and cracked black pepper.

                          I just cold smoked this so it went 10-11 hours and kept the temp in the smoker around 40 F. Get it nearly frozen to slice and then vac pack it. I cook it to temp just before eating.

                              Thanks for the points! I usually like to use my 14" Wusthof slicer but this time I wanted a bit more consistent than I can do with that. I just have a little 7 or 7 1/2" Rival folding slicer. I just fold the belly over and put it in the freezer for a while to get it firm. The little slicer handles the folded belly pretty well.
