    Tought many of you might not have a place to access the 2009 food code. This is hosted on my servers. You can download you own copy or just reference it here when you need it.

    Biggest Change, the danger zone is now 41 F to 134 F verses the old.

    No kiddin'- I had heard someone mention that change a couple months ago, and they had just went thru the Safe-Serve or some such class. What in a nutshell changed their minds?

      Bunch of Studies showing excellent pathogen kill at the 130 F level, so they added 5 degrees F for temp probe deviation and set it to 135 F.

      These changes come from HACCP programs being successful in demonstrated safe methodology. You can get variance approved from the food code using a proper HACCP program to prove you are making safe food with a different method.
