I've been playing with the vortex and 26'r and the third time I got delicious crispy chicken wings. Different foods I've been cooking were taking too long and wings weren't getting crispy. I noticed a full chimney wasn't enough to fill the vortex so I bought a second chimney. Fill each a little over half way and that fills the vortex to the very top with hot coals. It was around 37 deg outside and the lid thermo read around 500 most of the cook.
No Olive oil or seasoning just cook and then sauce by tossing in a bowl. Half with SBR and half with a homemade sauce.
1 cup orange pineapple juice
1/4 cup BS
2 TBS soy sauce
2 tsp minced garlic
1/4 tsp Onion powder
Simmer to reduce to about 1/3 cup.
I made this last weekend and it was an instant favorite with the family. Wife and I had it again tonight on wings and ate it with french fries. I may experiment with different juices but this is good stuff.
How long would sauce like this keep in the refrigerator? I never really made sauce like that.
Now that I figured out a method that produces crispy wings I will add some smoke and see what we like. I'm just excited to have a great way to make wings since stomach problems prevent me from eating fried foods. I see alot of grilled wings on the menu in this house.
