Evidently pickled eggs are not so popular here in NE Oklahoma. I've shopped around but can't seem to find any to sample. Then again, we do eat pretty much all the livestock so why put an egg in a jar? I'm still interested in trying them, especially those little quail eggs. Might be a new treat...sigpic
Some days I think Bravo Zulu, other days it's more like Whiskey Tango Foxtrot...

1/4 cup light brown sugar
2 cups apple cider vinegar
1 cups water
1 Tbsp red pepper flakes
2 tsp smoked paprika
1 Tbsp sea/pickling salt
1 Tbsp whole black peppercorns
lots of sriracha chile sauce (I probably used 1/2 cup)
This is the recipe I found and followed but looking at it now, I think I forgot to add the water, probably why it's so tangy. Going to play with this recipe a bit.
I will say with quail eggs I haven't really been affected by them when it comes to aroma. The has me on a limit of 2 deviled chicken eggs(I'll usually have 5-6 just to piss her off) but with quail I haven't noticed it.sigpic
