  • Red Enchilada Sauce...

    I had some leftover shredded chicken, rice & beans dish I made up a while back & figgered it would make some good enchiladas. I didn't have any store bought sauce, never much cared for the canned stuff anyway (soory Craig), so I did a search for a recipe. Found this one that sounded good...


    Red Enchilada Sauce
    INGREDIENTS
    • 3 Tbs chili powder
    • 3 Tbs flour
    • 1 Tbs cocoa powder
    • 1/2 tsp garlic salt
    • 1 tsp oregano
    • 3 cups water
    • 1 8 oz can tomato sauce



    Directions
    1. Combine all dry ingredients in a small bowl
    2. Stirring constantly, slowly add enough water to make a thin paste
    3. Pour into pan & add rest of water
    4. Cook over medium heat & add tomato sauce while stirring constantly until mixture thickens
    5. Use over your favorite enchilada recipe



    The thing that sent this recipe over the top for me was the cocoa powder. The recipe originally called for just a teaspoon of cocoa bhut I upped it to a tablespoon. Also, I only had a lil over two tablespoons of chill powder so I made up the balance with Smitty's...

    Topped off the enchiladas with some smoked pepper jack & some yummy black olives (soory Rob). Here's a couple pics...



    This recipe was pretty easy to put together & can easily be adjusted for your tastes. I'm never buying canned sauce again...

        Looks like some good enchiladas...

        Cocoa powder huh...

        Hmmm....Wonder how that would work into a Hatch pepper sauce...

            Always wondered how that stuff was made. Some reason..isn’t there some..maybe pork fat/grease too usually? Err?

                Many of the recipes I ran across did use a bit of oil of some sort to make a kind of 'chili roux' so I think pork fat is not too far off the mark.
                Hmmmm... Bacon fat???

                        I've wanted a good enchilada sauce. I usually just mix up some beef stock based gravy with lots of chili powder and call it good.

                        I loves me some enchiladas so I can't wait to give this one a try.
