  • SnP sausage V2.0

    Made a 10# batch of sausage last night using boneless/skinless chicken thighs.
    Used the Green Onion sausage mix that Rich sells and a 12oz Shiner Bock for some liquid.
    Used natural casings this round which worked well. Probably get lazy and use the pre tubed casings down the road.
    7#s or was the straight Green Onion mix
    The remaining 3#s I added 1/2 cup high temp cheese and 3tbls dehydrated jalapeņo.
    Test frying and sampling what was left in the stuffing tube, both came out awesome. Looking forward to grilling up a few links for dinner tonight

    Good looking sausage. I've made a lot of that onion sausage using pork but never thought of trying it with chicken thighs.

          They both look very good. I make chicken sausage for the lady of the house a few times a year.

          Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
          My best asset however is the inspiration from the members on this forum.
