Been a VERY long time since we got to enjoy some buffalo steaks of any kind...let alone T-Bones! For my dad being the Buffalo rancher we don't get to enjoy as many buffalo steaks as you think...every time he butchers they are always sold before they hit the freezer. We finally got a couple of packages to make it across the pasture to our place!!

Put a little garlic olive oil as a base on the steaks followed up with some Tatonka Dust and Canadian Steak seasoning.





Put them on the Yoder and let them get smoke for about an hour and 1/2.

Pulled the steaks and turned the Yoder to 500°. Did 3 mins per side with some nice sear marks. Once I pulled the steaks I sprinkle a extra dose of Tatonka Dust over them (very light sprinkle) when they were still hot - I am going to try this again but I think this second seasoning step is a winner.

Of course shrimp seasoned with Money and some garlic toast...

This was by far the best steak we have had in years!! You would have thought it was a perfectly dry aged steak....crazy tender and such an amazing flavor. I am going to try the very light dusting of Tatonka Dust and the end of another cook to compare this weekend. We are not going to go very long again before having another buffalo steak. Amazing! I wish everyone could taste this!!

That is such a perfect and even cooked steak, after the longer cook time and 3 mins per side I would have thought it would come out closer to med-well but that sliced pics is such a beautiful med-rare/light medium

That's a great idea with the dust cause it's great when cooked with and I love it raw, so much so that I usually pour a little pile of it on a plate when I'm cooking and take more and more taste tests so that extra layering of uncooked flavor would be great!

I've gone on long enough but want to finish with for buffalo, I have had buffalo this and that but it's hard to come by around here and have never actually tried a buffalo steak and can't imagine how great a buffalo T-Bone would be!!!

I do love beef but if I had to choose between beef and buffalo the buffalo is an obvious winner for taste, texture and even health reasons

I've had buffalo burgers but never a buffalo steak. I would love to try that!!! Awesome job on those steaks. I'm sure the Tatonka dust is just plain awesome on some tatonka steaks.
