      Yeah, I probably should have added some when bottling. I had planned on it but got in a rush and spaced it.

      Been a while on this one so time for an update. I couldn't wait any longer and pasteurized these a week ago Friday because I was heading out of town. Everything went fine, no explosions.

      Last night I cracked one open, not much of a hiss but there was a little. Flavor is great, despite not much in the way of carbonization. It's kind of like a soda that's been sitting open for a couple hours right now. I'm not sure if that's because I forgot the priming sugar and the yeast was too stressed to convert the sugars from the juice I added, or if I let it cold crash too long and the yeast went dormant and didn't wake up. Either way, a learning lesson for sure, and it's not going to keep me from drinking every last drop of this!

      It's slightly tart with a bit of a sweet finish, the dominant flavor is apple but the cherry comes through nicely. This is definitely something I'll be making more of.
