              Well put Rich.

I just keep thinking about how good that gumbo prolly is, homegrown range chicken, cooked with the bones still in the pot, allowed to set untill the next day before serving, sheesh...

Mark has that accent down pat in typing at least, french, creole, coon ass, whatever the combo is. Gotta try and make your Dad proud and try and come up with a pretty roux like that!

you got that right...wow do it all the time.

loved Justin. I used to hand write all his recipes while watching his shows in the 70s. Later we acquired a couple of his books. His Jambalaya recipe is the main one we use still today.
In the evenings we used to listen to WWL new Orleans on the radio just waiting on them to play a Justin Wilson story.

I can't recall ever watching an episode that didn't have pitchers of beer or jugs of wine, passed around at the end.......

Loved him too! But do any of you remember that he had tapes of, (I don't know whether to call it comedian or story teller), out there as well? My favorite uncle, who is a truck driver, asked if we wanted to hear some of his stuff that he listened to all the time on the road. We said sure, so he came to our motel room when we were at a family reunion, and a good time was had by all! He was not only a good Cajun cook, but a good Cajun story teller as well!
