  • Whole bone in boar leg

    Well I finally decided to smoke the boar leg I've had in the freezer for a year. Marinated with vinegar, apple cider, brown sugar, salt, pepper, bay leaf, fennel seed, rosemary sprigs.

    Draining tomorrow and adding the rub and bacon strips.

    Smoking with apple wood tomorrow.

    Developing........

      I'll be taking pics tomorrow when I dump the marinade and rub/bacon the leg. I'll take more when ready to slice.

                      Nice! Was a sow I take it. Flavor good? It’d be cool to go pop one for a pig roast... I’m just apprehensive about the “gamy” factor..and Trich is VERY possible in the wild ones. This IS your father’s pork...165+! Fuggeddabout a medium loin/chop.

                            Sow it was and delicious it is. Not gamey at all. If stored and cooked properly there is no need to worry about trich.
