In my opinion the Big Chief is a hassle and waste of space when a A-MAZE-N smoking product will accomplish a consistent, quality smoke with very little space used inside the freezer.
My converted freezer/smoker that I had used wood chips in now has been using the 5"X8" pellet smoker in for the last 2 years and am happy with the smoke. This year come sausage time I am going to try the tube smoker also.
I just ran across it & thought it was pretty interesting. The plastic interior was my question concerning safety. I don't know if I have ever seen one with the plastic still in place I thought that was a No-No
Well the temps generated by the big chief aren't going to be very high to begin with, plus the hose and the large space in the freezer, I doubt its going to get much over 100 degrees in there. Pretty much only a cold smoker. Should be fine.

Just wondering, what's up with the package of chicken on top of the freezer?
Shame the freezer doesn't work, you could just plug it in when you're done smoking. Or while your smoking for a really "cold smoke"!
Don't think I'd want that plastic, just me.

I believe that is a bag of wood chips on top of the freezer and not chicken but I could be wrong. I wouldn't want the plastic in it either but being it's pretty much just a cold smoker I guess it could slide by this one time.

I'm thinking it should work fine. I have been thinking of just cobbling together a plywood box about the same size for cold smoking. The amns or amnts should work great in it. My mes with the Smoke Daddy does a great job on cold smoke, but when it's time for sausage making it is a bit cramped.

I was all set to rush to the defense of the big chief smoker when i realized i have been taking the racks out of the smoker and setting them in a fridge conversion smoker. Pellets change every thing.
Go figure
