    Deutscher Kartoffel Salat
    (German Potato Salad)



    4 Cups red potatoes, peeled and sliced
    1 Cup onion, chopped
    1 1/2 Teaspoons salt
    8 Strips bacon
    4 Tablespoons flour
    6 Tablespoons bacon grease
    ¼ Cup vinegar
    1 1/2 Cups milk

    Boil potatoes until just tender; drain and add onion, 1 teaspoon salt, toss and set aside. Fry bacon until crisp; crush and sprinkle over potatoes. If needed, add vegetable oil to bacon grease to equal 6 tablespoons. Add flour to grease and 1/2 teaspoon salt, mix well. Add vinegar and milk to make a thin sauce, heat just to a boil. Pour sauce over potatoes and toss to coat completely. Serve warm.

    Hmm some add a bit of brown sugar, but I don't.
