How 'bout chopping it up and making a big batch of bbq nachos? Or, pulled pork quesadillas are eaten pretty quickly in my household.

what they said, the enchiladas and craigs burritos my favorites... when elk hunting this fall i took a pack up with us frozen, first nite up there i took a skillet and carmelized some onions in butter, a whole bunch.,,., then added the pork and basically just heated it up and seared it a lil bit, dumped in a can of bushes baked beans and simmered till hot. was a one pan meal and everyone loved it. no doubt i will do this at home too.
still like my sammies though with a dollop of coldslaw on top...Charbroil SFB

depending on the amount of spices/flavor, etc that you have in it, try to throw it into some hamburger helper in lieu of the burger.
my favorites so far as fajitas... just warm it all up in a pan, toss in some taco seasoning, onions, and bell peppers and you are good to go.
sammies
mix some in with the burger for meat loaf (never tried it, but it sounds good to me)
re-smoke it in a fattie
take it to work, throw it in a crock pot or even the microwave, and let the hoards eat it for you...
smoke freak's freezer may be full, but mine sure ain't...
toss it in with some mac n' cheese
spaghetti
rice-a-roni
mostacholi (spelling?) and/or goulash (spelling again?)
that's just off the top of my head... put some in front of me in the kitchen and i'll figure out a way to eat it. lol

We like pulled pork hash around here. To quote my original post from another dimension far, far away:
"Nothing complicated, just some left over pork, frozen hash browns, diced onion, chili powder, garlic powder, ancho chili powder and black pepper. Fried it up nice and crisp and topped it hickory smoked cheddar cheese, then two eggs over easy with some dried chives on them."
