    Well first props again to Squirrel Girl for a crazy good plate!!

    Since cornbread and pulled pork go well together I figured I would make a corn dog out of it! These were great!!

    Well here is what I did.

    Took out a bag of left over pulled pork and found the big hunks of pork in the bag and picked them out.


    Got a wood stick and stuck it through the hunks.


    Then took a corn bread mix and cut up a jalapeno got some cheddar and mixed it all up. Missed the all mixed up photo....


    Dunked the stick in the batter and dunked it into the hot oil. Cooked for a few minutes and out on to a plate...

    Here are a few shots that did not make the original cut..

    These were really good! Batter was a bit thin but not too bad. I would make these again in a heartbeat... that is if these did not clog it up too much..

        I bet those were good, Brian. Love me some corndogs at the fair, and what better meat than pulled pork instead of a rubber wiener Yet another out of the box creation.

                        Very cool idea, Brian.

                        TIP on Corn Dog: Unless you have a commercial corn dog fryer (vertical with clips like the county fair dudes), if you will spin the stick several times vs. just submerging, it will "set" the corn and you have much less of the "clog", AND you get a purdy, uniform shape.
