  • Chuck Eye Steak ‘n Twice Baked Potato

    Seasoned a couple of chuck eye steaks with Steak & Brisket seasoning to cook indirect around the Vortex.


    -----

    Steaks getting a quick sear.

    Twice baked potatoes were topped with cheese and bacon bits towards to end of the cook and topped with sour cream when plated.


    -----

    Perfectly done to our preference.

      I'm surprised you all eat so much beef given the amount of bison in your backyard.

        The bison meat sells like hotcakes for much more than beef. It is my in-laws income thus we purchase beef... occasionally we get a treat!

                The chuck eye is one of my favorites. It looks as though you've done that one justice!! That's a GREAT looking meal! Do Bison have a chuck eye?

                    They do but good luck getting one from the "butcher" my in-laws use! We attempted tri-tip, packer brisket, you name it... always a fail. He has burger, rib-eye and T-bone down though!

                        Yup, tried a full bison packer once. 35 pounds. Took 28 hours to cook. It rendered well but never had the tenderness we had hoped for. Small cuts from the Oklahoma buffalo have always been great but the animal reserves here are limited so it is very expensive. I bet one bison ribeye could feed a whole family!
