I would like to ask what people do when using water in the Gen 2.5? I have alway's opened the vent 100%. Am I wrong in this? Help Bear!!!

Hi PE,
That's an easy one. The best thing to do with an MES water pan is to cover it with foil, and put it in place. That way it will help keep the direct heat away from the meat above. Adding liquid to an MES water pan does nothing good. I haven't put water in my water pan in 7 years.
I keep my top vent open 100%, except when I close it for Preheating, storing, and after I stop adding smoke. Also If it's Windy out, I'll often close it halfway to keep the wind from sucking the heat out through the top vent.
