Oven cooking of snackstix - done summer sausage as smoke doesn't penetrate the casing - so why bother smoking ?
I tend to cook them at gas mark 3 in the bottom of the oven till they hit 65c
(does some internetting)
apparently that's around 300f till it hits 150f.
As far as hi-temp (read: low fat) cheese goes. I just use reduced fat mature cheddar.
You could also use haloumi, that would make for interesting stix for sure !

I'm going to smoke a majority of it as it's what I like but want to try some without smoke cause my wife doesn't like the smoke flavor like i. I'll Half to look up haloumi. Never heard of it

yes there is and y'all Can teach me.
Now that's my kind of question :-)
Umm, you know that 'corn syrup solids' is just sugar right ?
So you bought: salt, sugar and garlic and probably some pepper.
I do appreciate ypu might not have time to mix your own - bit if you fancy it, drop me a line.
It's dead easy and you don't need anything expensive to grind and mix your own bulk spice mixes.
