  • Banh Mi Tater Tots

    I ran across this recipe awhile ago and really wanted to try it. I'm glad I did, it was very good.

    Here are the details:

    PORK
    • 1/2 pound Boneless Country Style Ribs chopped small
    • 1/4 cup Fish Sauce
    • 2 tablespoons Sugar
    • 2 tablespoons Onion minced
    • 2 cloves Garlic minced

    TOTS
    • 45 tots (about 1 pound of frozen tots) I used the minis and they work better IMO.
    • 2 tablespoons Vegetable Oil - I used canola
    • 2 tablespoons Mayo
    • 2 tablespoons Sriracha
    • 1 handful Cilantro
    • 1/4 cup Pickled Carrot and Daikon - I used just carrots
    • 2 fried eggs

    INSTRUCTIONS
    1. Mix the pork ingredients and allow to sit for a few hours in the fridge.
    2. Cook the pork in a hot pan with a little oil for about 15 minutes to brown on the outside and cook through.
    3. Preheat oven to 450.
    4. Toss the tots with the oil right on a baking sheet. Spread out evenly. Cook at 450 for about 20 minutes until crispy, flipping once during cooking.
    5. Place the tots onto a plate.
    6. Top with the pork, cilantro, and pickled carrot and daikon
    7. Drizzle with sriracha mayo
    8. Top with a fried egg, I used tow, over easy

    I used CI for the pork so that's why I put this here. You could also smoke or grill the tots which would be very good as well.

    Almost ready and I added some sliced jalapenos which really works:



    Dinner:



    I just put it all in one big serving plate and let the family take what they wanted. We ate the whole plate basically. It's very good and would make for some fine comfort food on a fall or winter day as well. We ate this one as dinner. You might even want to do 4 eggs as my kids each took an egg and the Mrs. and I didn't get any .

      Damn I love this place
      I haven't had pickled carrots so I don't know how that would work but...Damn...
      The ideas are rolling through my head as I type...

              Yeah I remember that...
              I don't have a lot of experience with Asian type flavors...I guess I need to step out and give it a try...
