  • Apple Smoked Mad Hunky Almond Butter

    Long story..... Our family often buys those big plastic jars of mixed nuts from Costco, and those jars go pretty quick.... Almonds, always end up as the last ones surviving Butt, they love Almond butter on toast...... So, I saved 3 jars of leftover Almonds and hit them with EVOO and Mad Hunky and smoked them with Apple wood.... Good eating at this point.

    Then, put them in the food processor and pulverized them good..... Scraping the sides every so often, as needed, then added some EVOO to get some moisture into the mix..... Pulse.... Scrape..... Pulse..... Scrape until I got the consistency I wanted. Actually had to add a few raw Almonds to tighten it up a bit, and a little more Mad Hunky for good measure Pics look kinda runny, but stirred up a bit, its "firmer"..... Not quite typical Peanut butter consistency, but slightly looser.

    Taste test was great! Better than the store bought stuff the wife unit buys, with a hint of smoke, and a hint of Hunky. Salt was not needed, as there was some leftover from the original jars, but sure could be added if starting with raw Almonds. Give this a try

      I bet some butter butter would be good with that... Man...a schmear on a hunk of baklava...

            Looks and sounds fantastic!
            Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
            My best asset however is the inspiration from the members on this forum.

              Tried it on pancakes, with grape jelly. Good stuff You folks that like to experiment should give it a try.

                  woulda never thought of smoked almond butter, but I bet it kicks ass! I might even be tempted to try that on a burger!

                        Actually if you're adding MH (other rubs are available) that'll add the necessary salt.

                        but I love the idea of spicy smoked nut butter !

                        But I don't have ahigh powered mega blender and I don't know how the my little food processor would handle nuts, and I like my peanut butter as firm as possible.

                        That said I can always mix it fairly sloppy with smoked almonds and mix in some peanut flour manually to thicken it up - Hmmm, now you got me thinking
