  • More Wings

    Got family pack of wings in the brine, 1/2 cup brown sugar, 1/2 cup kosher salt, tbl spoon garlic powder, tbl spoon onion powder, tbl spoon cayenne pepper. will be going on tomorrow.
    Made the blue cheese dipping sauce, 1 cup mayo, 1 cup sour cream, 4 chopped green onions, 1 tbl spoon cbp, 2 tbl spoons dried parsley, 5 oz crumbled blue cheese, garlic salt to taste. Already taste great but will be better tomorrow.
    More to come tomorrow with pic's...
    I'm no Gynecologist
    But I'll take a look at it

      Smoked more mild chedder on the drum using the a-maze-n tray,



      Made a metal ring out of expanded metal to hold the charcoal in the center, got to order me a vortex,



      Mixed some hot azz wang with cooking oil to coat wings,



      placed wings around coals for 35-40 minutes,



      then over the coals to crisp up,



      They didn't last long
      I'm no Gynecologist
      But I'll take a look at it

        Wings look good.

        Vortex will make a difference though. Solid sides and conical shape definitely make a difference. When you get one, remember to walk around the kettle to flip stuff. You don't want to reach across a lit Vortex.

            That would give you more of the updraft effect for sure.

            But I think the conical shapes makes a difference as well. It's a pretty intense heat -- according to my forearm anyway.

            Nothing wrong with using what you have available though.

                They must have been just a little dry, took several beers to wash'um down
