  • Turkey balls!

    Sous chef wanted to cook meatballs tonight, so turkey balls it is!


    Here's the base recipe. As usual we changed a few things and stuffed them with cheese too. We double the recipe and added some fresh herbs. We used ground turkey instead of chicken.


    1 1/4 lbs ground chicken
    1/2 cup breadcrumbs
    2 tablespoons onions, chopped
    1/2 cup pecorino cheese (or Parmesan)
    salt
    pepper
    1 garlic clove, minced
    1 teaspoon fennel seed
    1 egg, whisked
    1/2 lemon zest (zest from half a lemon)
    3 tablespoons olive oil
    1 (14 ounce) can pizza sauce
    4 ounces fresh mozzarella cheese (12 thin slices)

    Preheat oven to 400°F, setting rack to upper third part of oven.

    In a large bowl, using your hands, gently mix together first 11 ingredients.

    Shape into lacrosse-ball size balls (that would be somewhere between golf and tennis) and place a few inches from each other on a foil-lined baking sheet.

    In a small bowl, mix one spoonful of your pizza sauce with olive oil. Brush this mixture on top of each meatball. Bake for 20 - 25 minutes.

    Remove meatballs from oven, spoon some sauce on top of each meatball, and cover each with a slice of cheese.

    Broil another 3 to 5 minutes until cheese is bubbly and golden.

    Heat remaining sauce in a small saucepan.

    Serve meatballs with a dollop of sauce.

    Reads and looks delicious. But the title is turkey balls. Missed where the turkey comes into the recipe.

        Dirtsailor, the turkey balls look delicious! Your son is learning a lifetime skill and having fun doing it. Congratulations to you and your son. You are helping him create memories that will never be forgotten.

          Thank you! He's a creative and crafty kid that enjoys cooking. Tomorrow we start a weekend of sausage making!

            My wife just came home with ground turkey from the grocery store.

            I know what I'm making with it, thanks for the recipe. Can I borrow your chef. Looks pretty confident that there going to taste delicious.

                            Looks fantastic! Definitely stealing this one.

                            Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                            My best asset however is the inspiration from the members on this forum.
