    The wife told me Sunday I needed to do something with the tomatoes in the fridge and I would be making supper Monday cause she had to coach volleyball. I was pretty excited yesterday, with work being busy and being sick for the last 3 weeks I haven't cooked in awhile. So I came up with this for supper(sorry for the crappy pics). Cut the tops off the tomatoes and scooped out the inards. Left about 1/2" of the flesh and then turned upside down to drain. Took one pound I'd ground pork and made Italian sausage. I then added the tomatoes I scooped out, mozzarella cheese, and Italian bread crumbs. Stuffed the maters and made meatballs with the rest. I really wanted to smoke these but I was to tired and lazy to do it. So into the oven at 350 for 45 minutes and then topped with more cheese and put under the broiler. Served with pasta. For never doing this before I was pleased with how well they turned out.

      Have done the tomato gig several times with tuna fish or other cold items inside but never like that, how did the tomato itself hold up to the high heat cooking?
      My biggest fear would be that they would get really soft by the time the pork cooked.

      Looks good though, ooey-gooey cheesy goodness

        I was worried if the tomato would hold up. Surprisingly it did though. The skin was just starting to wrinkle and crack.

                      I know I really wish I would've. It would have added such a great taste, but been fighting allergies/pneumonia so when I get home from work I'm exhausted.(find out tomorrow if I'm getting better)

                          And you actually used the right part of the tomato. Apparently most of the flavour and all of the umami is in the skin
