For the Oklahoma game last night sliders were the menu item. I wanted to do some burgers based on a place in Oklahoma I saw on tv that pressed raw onions into the burger while they were cooking. I went to OU for college, and knew this would be a great finger food for the game.
Of course I have to throw my own twists into anything I do. The burger mix was 3/4 lb. ground chuck & 1/2 lb. ground bison. Some salt, black pepper, garlic powder and L & P finished out the mix.
I made some mayo from scratch, substituting quail egg yolks in the recipe. the end result was a rich, fresh version.
I also cubed up some pork belly, and rendered it down in its own fat before tossing it in the wok to crisp up.
Burgers had american cheese added to melt, and were served on those small Hawaiian roles. Topped with a picles slice, some chunks of pork belly, a quail egg, some ketchup and the quail mayo... End result was great, lots of textures and flavors, but the beef and bison was the star.
