      Looks tasty! Hoppin John?

Fill us guys in from the NW on Hoppin John if you get Thyme. Beans and rice?

Basically it's blackeyed peas and rice.
I use purple-hull peas, a sweet red pepper-roasted & chopped, a sweet onion-chopped, ham hock- chopped ham-or chopped thick sliced bacon, salt & pepper. then served over long grain rice.

There's so many recipes out there. Simple tends to be better.
