No photos as wife got gung-ho and messed up the photo op. Impatience. We dry brined a full salmon filet for 24 hours. Oven baked at 180 until the temp hit 168. What counts is it was the first salmon I really enjoyed enough to pig out since salmon on the shores of Coos Bay Oregon in 1964.

Salmon in on the list of things I really want to do. I have an MES smoker that I can cold smoke in with my A-maze-N pellet smoker. I see you said you "dry brined" your salmon and then cooked it to 168 degrees. Can you explain the "dry brine" method?sigpic

Finally took a photo of it as a leftover snack. Wild caught salmon soon will be back in the markets.
