  • Chipotle pepper in Adobo sauce

    Was running low on chipotle peppers in Adobo sauce.

    Started with smoking Jalapenos with pecan in the MES. Got the recipe I found on the Web.

    On the rack in the MES at 250*


    Out they come


    This what goes in it


    Boiled down and simmered for awhile.
    Then pack in a jar and freeze for further use.

              I have a similar recipe...But it has never been used All my chipotle gets turned into powder...

                My wife says, it smells and tastes different then the can stuff, it's still very good.

                I'm just wondering if it's the jalapenos, do they taste different when they turn red (ripe), compared to green, Granite the recipes are all different.

                  Looks good, bet it was tasty.

                  I think they taste different. JMHO
                  Also it looks as thou you didn't blend the first half enough to make a real smooth paste. Again JMHO
                  Tomato puree would also make a taste difference.
                  Were the peppers dehydrated like the recipe called for ?
                  All this can make a difference.

                  Is this the first time you have made this recipe?

                  If you can, try and find a Rick Bayless recipe for this.

                      What I use it for is, Chipotle mayo, and dips which it gets blended again, couple TBS. in Chilli etc, etc.

                      I did blend a few. Then cut the peppers in half.

                      It is my second time.

                        I know that would be good. I use a lot of the canned stuff...blend it up and use it for hummus, dips, mayo, chili, etc. Hadn't thought of a from scratch version...got a few cans in my pantry now...will give it a run when I use up existing inventory!
