Got two rackets of Leidy's St. Louis style ribs I smoked up today. Went to fire off sparky and it didn't work. Don't know what happened between last fall and today but I think it's toast. So I did them on the kettle. Regular vortex set up with a block of cherry on top. Put the ribs around the outside let her go for 6 hours, held the temps between 250 and 300, a little spike here and there but very happy with my first slow smoke in her. Temps easy to maintain. My own rub, sticky apple glaze at the end. Sides were foil packet potatoes, and stove top beans made with double smoked bacon. I really only needed the ribs, didn't hardly touch anything else. I will not wait another three years to do ribs again!
