I've been on this forum for some years. Following what people are up to at my favorite pass time. I've smoked meats trying to get that "Just right taste". I've had a lot of failures. I recently contacted Bearcarver whom I have watched with great interests. Well, It is time to tackle my first Bacon cure/smoke. I bought a MES 40, Gen 2. AMNPS, and did his famous Bacon (Extra Smoky). Did it exactly as he printed it. It came out better than I had expected. This man knows his cooking!! Thanks again Bear and I have more confidence than I did before this adventure. Next....I'm going to try some maple with it. You other people wishing to finally get with the bacon craze......Try it!
