Needed semi-soft food. So, I decided to make a grilled seafood dinner
Shrimp & scallops ready to go
Shells stuffed with shrimp & scallop dressing
Shrimp & scallops skewered and seasoned
Keg heated to 400° using RO lump and orange wood
The shells and a small comal went in the Keg about 10 minutes before the rest of the food
Shrimp & scallops being added to the Keg.
I used melted butter & lime juice to sear the scallops in the comal
Got busy and almost over cooked the noodles
Everything is almost done
Shrimp, scallops, & stuffed shell topped with Rémoulade sauce served on a bed of Thai sweet chili noodles
