Doesn't sound too bad. I'm guessing it was a flat only? And the extra temp probably hurt a bit.

You were able to eat it. That's a good thing. Has not always been the case with me.

That was not my first brisket by the way.

Give it awhile. The next one will be better. You can do it.

Yes, it was the flat only. I probably did have the temp too high.

I think what may have happened with it was the where I put it in the MES. I put it on the bottom rack, right over the top of the heating element. If that didn't cause my problem, could it be that it was the pellets that came with it? There was a lot of dust mixed in with them. Truly I have no idea. All I know is that joker was rolling out the smoke big time, all three rows!

I did have the rack above covered with foil so no drippings would get on the A-maze-N.

I meant when the Amazen Smoker flamed up.

Looks like your set temp was fine.

Sounds like that was most likely the issue.

From the AMPS FAQ located at http://www.amazenproducts.com/v/vspf...structions.pdf
DO NOT place directly above or adjacent to a heat source

I know Bearcarver uses an AMPS in his MES and according to his posts he puts it "on bars to left of chip drawer". Not familiar with the MES so I don't know what that looks like but it might be worth a try. It seems to work for him.

When I use mine I put it all the way to the left, I'm sure your heating element was the problem, I have the dust unit and the pellet tube both go too the far left.

It depends on which MES you have.
                      Best places seem to be:

Gen #1------On the Support rods in the bottom, left of the Chip burner.

Gen #2------Remove small water pan from slanted Drip plate, and straddle the water pan hole with the AMNPS. Or Bottom Rack on far left(away from heating element.

Gen #2.5-----Bottom rack on far left (away from heating element), or bottom left corner of smoker, raised up a little on something to allow air flow.
