This was a good sized fillet, around 3lbs. I fold the tail and belly flap under to get an even thickness. Then rub it down with some evoo, sprinkle on some lemon pepper, dill, basil, top it of with a nice coating of brown sugar and chopped onion bits.
On the smoker at 190, smoking with alder.
After 1.5 hrs.
And finished, 3hrs :)
Plated with some lemon roasted red potatoes and green beans.
