  • Overgrown zucchini on the grill

    Yeah I had one that got away from me...But not to waste it...I gutted it and threw the seedy crap into the compost...
    Put the hollowed out squash on the grill indirect...
    And of course some bacon


    Removed the bacon and made some shroom sauce with lots of JAB on the shrooms...I guess that makes it JAM


    Covered the shroom mix with cornbread stuffing and tossed on the bacon...
    Filled the squash halves with some leftover "chicken, black bean, and green chile" burrito filling and let that cook about that long...


    Added some green chile enchilada sauce...


    And covered with cheese...cooked that for about
    Musta forgot to take a picture but think of cheese melting off the edges of the zukes and kinda browning on top a bit...There's a pic even PB cant take away

    In the house I cut the squash in slices about two inches thick...
    And it looked like this...


    Well once again...I feel better on a Friday night and ate pretty good too...

    Very nice Love stuffed squash and yours look delicious.

      Looks good, those squash can grow about 4 inches in one night it seems... once they get going they go.... great use. Do you ever make bread out of them? Good stuff with some honey butter!!

                I got some that were picked at the right size

                I bet the P-shake would go great with them...
                I can tell ya that sauteing them in clarified butter with some JAB is f-ing great...

                  Another Friday night cook that is worthy.

                  Great cook man.
                  Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                  My best asset however is the inspiration from the members on this forum.
